Brunch Pizza

2 8-oz cans crescent rolls 10 large eggs, beaten
1/2 cup milk 1/2 t dry mustard 1/2 t pepper
1 lb ground sausage, browned (or chopped ham) drained 2-3 C hash browns with onion & pepper
2-3 C shredded Cheddar cheese
Preheat oven to 375 deg. Lightly grease jelly roll pan.
Unfold rolls & spread in pan. Mix eggs, mustard, pepper.
Sprinkle sausage & potatoes in pan, then cheese. Pour

egg mixture over, & bake 40-45 minutes, until solid.
Cool slightly. 8-12 servings

Pineapple Onion Cheese Ball
2 C chopped pecans 2 8-oz pkgs cream cheese
1/4 C minced green pepper 1/8 C minced purple onion
1 8-oz can crushed pineapple (thoroughly drained)
1 t seasoned salt
Mix all but 1 C of the pecans throughly, form into a ball,
coat with the remaining chopped pecans & chill.
Serve with Ritz crackers.

Potato Casserole
2 lbs frozen hashbrown potatoes 1/2 C melted butter
1 t salt 1/4 t pepper 1/4 C onion, chopped fine
1 can cream of chicken soup 2 C sour cream
1 C (or less) buttered bread crumbs
Defrost potatoes, combine with all remaining ingredients.
Pour into buttered 3-quart casserole. Bake uncovered
at 350 degrees for 1 hour. May be frozen until needed.
Also, I always use Pepperidge Farms crumb stuffing
wherever bread crumbs are called for. Serves 8-10

Pecan Pie Bars
1 1/2 C packed brown sugar 1/2 C margarine
2 t vanilla 2 eggs 1/2 t nutmeg 1 1/2 C flour
1 t baking powder 1/4 t salt 1/2 C chopped pecans
Preheat oven to 350 degrees. Grease 13x9" pan.
Beat brown sugar & margarine; add vanilla & eggs.
Add flour, b.p., nutmeg & salt. Spread in pan, sprinkle
with pecans. Bake 18-28 minutes, until done in middle.

This recipe can be prepared with equal ease for 10
persons or 2, or everyone you meet and invite to
your house. And it may be served with a variety of
side dishes to heighten its flavor and durability.
