Time
for hot chocolate, hot cider,
and
some chili!
And
mix up a jar or 2 of spiced tea mix
for
yourself & for gifts.
Hot
Chocolate
1/4
c. cocoa, 1/2 c. sugar, dash salt
Combine
in saucepan & stir in 1/3 c. hot water.
Bring
to boil over medium heat, stirring constantly.
Boil
& stir 2 minutes. Add 4 c. milk.
Stir
& heat...do not boil!
Remove
from heat, add 3/4 t. vanilla.
Beat
with rotary beater until foamy.

Spiced
Tea
One
18 oz. jar of Tang, 1 c instant tea
1
pkg. lemonade mix
1
t. cinnamon, 2 t. ground cloves
Mix
well & store in airtight container.
Use
about 2 t. per cup of hot water.
Fill
jars to give as gifts!
Hot
Spiced Cider
1/2
gallon apple cider, 2 c. orange juice, 3/4 c. lemon juice
1/4
c. honey, 14 cinnamon sticks,
6
whole cloves, 1 t. allspice, 1 1/2 butter
Combine
all ingredients except cinnamon sticks in saucepan;
bring
just to a boil. Cover & simmer 30 minutes.
Serve
hot with cinnamon sticks stirs.
Hot
Spiced Punch
9
c. unsweeted pineapple juice, 9 c. cranberry juice

1/2 c. water, 1 c. brown sugar
Mix...be
sure sugar is dissolved.
Pour
into 30-cup coffee maker.
In
coffee maker basket add:
4
1/2 t. whole cloves, 1/4 t. salt
4
cinnamon sticks (broken)
Perk
until taste is blended.
(This
is one of our Christmas traditions.)
White Chili
1
lb. white beans, 6 c. chicken broth, 2 cloves garlic (minced)
2
medium onions (chopped), 1 T oil or margarine
2
4-oz. cans chopped green chiles, 2 t. ground cumin
1
1/2 t. oregano, 1/4 t. cayenne pepper
4
c. diced cooked chicken breasts
3
c. grated Monterey Jack cheese
Combine
beans, broth, garlic & half the onions.
Bring
to boil & simmer till very soft (2 1/2-3 hrs)
(May
need more broth, can use bouillion to make extra)
In
skillet, saute remaining onion in oil or margarine until tender.
Add
chiles and spices. Add to bean mixture.
Add
diced chicken & simmer 1 hour.
Serve
topped with grated cheese.
(8-10
servings)
May
be topped instead/also with sour cream, chopped ripe olives,
chopped
tomato, tortilla chips, salsa or guacamole.
